Waterless Chicken Soup

I was planning for this week's dinner and I chanced upon waterless chicken soup. I bought all the ingredients and I tried it. It's easy to cook but it'll take some time. Below are all the ingredients I used:

1/2 chicken (cut into 6 pieces)

1/2 napa cabbage

1 red onion

3 cloves of garlic

1x carrot

Goji/wolf berries

5 slices of ginger

Celtic Salt

I cooked in a cast iron pot with lid on.

In hindsight:

Using whole chicken will definitely bring more soup. I used 1/2 chicken parts; not so much soup. After 45 minutes, I added water.

If you put a lot of goji berries, it will taste bitter.

Cook on a very slow fire for 1.5-2hrs.

Salt for taste. It's up to you.

The soup is reddish brown and it tastes a bit herbal-ly (braised?).

And the chicken will be very tender.
